Induction heat changes how food performs in a pan.  No longer can you turn the burner up to high and walk away to prep the raw food while the pan heats up.

The pan is hot within 10 seconds and water is boiling in 60 seconds.  Garlic burns, oil starts smoking and liquids boil right before your eyes.

Turn it down and you get really even pan temperature across the whole face of the pan.
